Preparation/方法
  1. Rinse dried rice beans under running water; Soak it in water for 4 hours; Remove and drain it.
  2. Rinse dried lablab beans under running water; Soak it in water for 4 hours; Remove and drain it.
  3. Rinse, drain and slice ginger.
  4. Rinse winter melon under running water; Scrape out the seeds; Cut it into chunks.
  5. Rinse dried honey dates under running water; Drain them.
  6. Rinse pork tail bones; Pat-dry it with kitchen paper; Cut it into large chunks.
  7. Fill a deep pan with water; Add the ginger; Bring to the boil over a high heat; Scald the pork tail bones all over in a colander with the boiling ginger water for 5 minutes; Immediately remove them; Rinse them under running water till cool; Drain them; Turn off the heat.
  8. Fill a stockpot with 2L water; Add the dried lablab beans and the dried rice beans; Bring to the boil over a high heat; Add all the remaining ingredients, and bring to the boil over a high heat again; Turn to a low heat; Cover the pot with its lid; Cook over a low heat for 2.5 hours; Stir seasonings into the soup; Turn off the heat; Arrange the soup into serving bowls; Ready to serve.
