Preparation/方法
  1. Rinse dried yellow fungus under running water; Soak it in water for 8 hours; Remove and drain it; Trim off its coarse stems; Cut it into pieces.
  2. Rinse black-eyed peas under running water; Soak them in water for 3 hours; Remove and drain them.
  3. Rinse dried tangerine peel; Soak it in water for 3 hours; Remove it; Gently scrape off any white pith.
  4. Rinse dried snow lotus under running water; Soak it in water for an hour; Remove and drain it; Cut it into pieces.
  5. Rinse raw shelled peanuts; Soak them in water for an hour; Remove and drain them.
  6. Rinse honey dates under running water and drain them.
  7. Fill a wok with water; Bring to the boil over a high heat; Blanch the dried yellow fungus in a colander for 2 minutes; Immediately remove it and rinse it under running water briefly; Drain it; Turn off the heat.
  8. Fill a stockpot with 2880ml water; Add the black-eyed peas, the peanuts, the honey dates and the dried tangerine peel; Bring to the boil over a high heat; Add the dried snow lotus and the dried yellow fungus, and bring to the boil over a high heat again; Turn to a low heat; Cover the pot with its lid; Cook over a low heat for 2 hours; Stir seasonings into the soup; Turn off the heat; Arrange the soup in serving bowls; Ready to serve.
