Preparation/方法
  1. Rinse, drain, peel and slice ginger.
  2. Rinse mustard greens under running water thoroughly; Drain them; Trim a bit off the bottoms; Discard any wilted outer leaves; Cut the remaining into pieces.
  3. Rinse pork spareribs under running water; Pat-dry them with kitchen paper; Cut them into chunks.
  4. Fill a deep pan with water; Add an half of the ginger; Bring to the boil over a high heat; Scald the pork spareribs all over in a colander with the boiling ginger water for 3 minutes; Immediately remove them; Rinse them under running water till cool; Drain them; Turn off the heat.
  5. Fill a stockpot with 2.5L water; Bring to the boil over a high heat; Add the pork spareribs and the remaining ginger slices; Bring to the boil over a high heat again; Turn to a medium heat; Cover the pot with its lid; Cook over a medium heat for 45 minutes; Scoop scum off with a perforated skimmer; Add the mustard greens; Bring to the boil over a high heat again; Cook over a high heat for 5 minutes; Stir seasonings into the soup; Turn off the heat; Arrange the soup in serving bowls; Ready to serve.
