Preparation/方法
  1. Rinse pitted dried red dates under running water; Soak them in water for 15 minutes; Remove them; Rinse them under running water again; Drain them.
  2. Rinse and drain monk fruits; Put them into a mortar and crack them a pestle.
  3. Rinse, drain and slice ginger.
  4. Remove husks of corn; Rinse and drain it; Cut it into sections.
  5. Rinse apples; Drain them; Twist off any stems; Insert the sharp tip of a swivel peeler and run around the cores of the pears; Scrape out the cores inside; Cut the apples into chunks.
  6. Rinse silkie chicken under running water; Discard any innards and any lumps of fat from the chicken’s cavity; Remove any feather with a pair of tweezers; Rinse it under running water again; Drain it; Cut it into pieces.
  7. Fill a deep pan with water; Add the ginger; Bring to the boil over a high heat; Scald the chicken all over in a colander with the boiling ginger water for 3 minutes; Immediately remove it; Rinse it under running water till cool; Drain it; Turn off the heat.
  8. Fill a stockpot with 2.5L water; Bring to the boil over a high heat; Add all the remaining ingredients and bring to the boil over a high heat again; Turn to a low heat; Cover the pot with its lid; Cook over a low heat for 2 hours; Scoop scum off with a perforated skimmer; Stir seasonings into the soup; Turn off the heat; Arrange the soup in serving bowls; Ready to serve.
