Preparation/方法
  1. Rinse sweet almonds under running water; Soak them in water for 2 hours; Remove and drain them.
  2. Rinse Chinese cured duck under running water; Soak it in water with 2 tbsp salt for 2 hours (change the salty water every hour); Remove it; Rinse it under running water again; Drain it.
  3. Rinse dried bok choy under running water; Soak it in water for 1.5 hours; Remove it; Rinse it under running water again; Drain it.
  4. Rinse bok choy under running water; Soak it in water for 1 hour; Remove it; Rinse it under running water again; Drain it; Discard any wilted leaves.
  5. Rinse and drain monk fruits; Put them into a mortar and crack them a pestle.
  6. Rinse, drain and slice ginger.
  7. Rinse lean pork; Pat-dry it with kitchen paper; Cut it into large chunks.
  8. Fill a deep pan with water; Add the ginger; Bring to the boil over a high heat; Scald the lean pork all over in a colander with the boiling ginger water for 1 minute; Immediately remove it; Rinse it under running water till cool; Drain it; Scald the cured duck all over in a colander with the boiling ginger water for 2 minutes; Remove it and rinse it under running water; Turn off the heat; Drain the cured duck.
  9. Fill a stockpot with 2.8L water; Bring to the boil over a high heat; Add all the ingredients, and bring to the boil over a high heat again; Turn to a low heat; Cover the pot with its lid; Cook over a low heat for 2.5 hours; Stir seasonings into the soup; Turn off the heat; Arrange the soup into a serving bowl; Ready to serve.
