STEWED PRESSED BAMBOO SHOOTS

INGREDIENTS :
600g(3lbs.) dried bamboo shoots, 150g(1/3lb.) pickles, 3 cloves garlic, 1T oil.

SEASONINGS:
1t salt, 1/10lbs. pork oil, 1T soy sauce, 1T sugar, 4 cups of water.
 
PREPARATION :
1. Soak dried bamboo shoots in water for 10 minutes, remove and rinse; Cut pickles into strips, rinse, and then soak in water for 10 minutes; Peel, rinse and chop garlic.
2. Blanch bamboo shoots and pickles in boiling water separately, remove, and soak in cold water for 3 minutes.
3. Heat 1T oil in a wok; Add garlic and cook till fragrant; Add bamboo shoots, pickles, and seasonings; Cook over low heat for 1 hour. Ready to serve.
