1. Peel bamboo shoot, rinse and cut into pieces; Peel, rinse and chop garlic.
2. Heat 2 cups of oil in a wok; Slowly slide in bamboo shoot; Deep-fry over a low heat until lightly brown; Remove and drain.
3. Heat 2T oil in a frying pan; Add garlic and stir-fry it till fragrant; Add bamboo shoot and seasoning (2); Cook over a high heat till boil, and then simmer over a low heat for 15 minutes until the liquid is almost gone and no bitter taste remained.
4. Drizzle with seasoning (1); Stir-fry again over a high heat for a few seconds. Ready to serve.
