1 firm tofu, 8 red dates, 1T medlars, 1 cup of chicken stock.
PREPARATION :
1. Seed red dates, rinse and drain well; Rinse medlars and drain well; Blanch tofu and drain well.
2. Bring chicken stock to the boil over a high heat; Add red dates and medlars; Simmer over a low heat for 10 minutes.
3. Pour red dates and medlars soup over tofu. Ready to serve.

Quality tofu should be smooth on the surface, free from slimy/sticky substance and stale smell.
