1. Soak white fungus in water till soft; Remove yellowish stem; Rinse and blanch in boiling water for 5 minutes; Remove and immediately rinse in cold water; Shred.
2. Rinse cucumber; Cut off the parts from both ends of the cucumber; Rub each end with each other few times; Throw away two ends; Shred the remaining.
3. Rinse chicken and marinate in seasoning (2) for 30 minutes; Cook in boiling water till done; Remove and immediately rinse in cold water; Shred.
4. Rinse, seed and shred red chili pepper; Rinse coriander.
5. Add shredded white fungus, shredded red chili pepper, shredded chicken, shredded cucumber and seasoning (1); Stir well; Garnish with coriander. Ready to serve.
