1. Rinse and sock dried shrimps in water till soft; Rinse, soak dried shiitake mushrooms in water till soft, and then mince; Peel, rinse and mince water chestnuts; Rinse and seed red dates.
2. Rinse ground pork; Add seasonings and stir well; Marinate for 20 minutes.
3. Add ground pork, dried shrimps, minced mushrooms, minced water chestnuts and 2 cups of stock; Stir well; Pour the mixture to a bowl; Garnish with red dates.
4. Arrange a steaming rack into a deep wok; Arrange the bowl with the mixture on the steaming rack; Pour water into the wok till 1/4 height of the bowl; Cover the wok with a lid; Steam over a low heat for 20 minutes. Ready to serve.
COOKING TIPS:
If fresh water chestnuts are not available, canned one could be substituted.
