1. Soak oysters in salty water for 10 minutes and remove; Rinse by rubbing in salty water; Remove and drain; Blanch in boiling water for 3 minutes; Remove and immediately soak in cold water for 10 minutes.
2. Rinse and cut leek into sections; Peel, rinse and mince garlic.
3. Add seasonings to a bowl and mix well.
4. Heat a wok with 2T oil over a high heat; Stir-fry garlic and salted black beans over a high heat till fragrant; Add leek and stir-fry over a low heat briefly; Add seasonings and the oysters; Cook over a low heat till the sauce has thickened. Ready to serve.
COOKING TIPS:
If dried salted black beans are used, after rinsing, they have to be soaked in water briefly but not too long so as to keep the flavors. If wet salted black beans are used, they only have to be rinsed.
