STIR-FRIED MUTTON WITH PEKING SCALLION

INGREDIENTS :
300g frozen thinly sliced mutton, 1 stalk of Peking scallion, some garlic, some red chili pepper, 2T oil, some salt.

SEASONINGS:
(1) 2t potato starch, some ground white pepper, 1t sesame oil.
(2) 3/4T light soy sauce, 1/3t sugar, 3T water.
 
PREPARATION :
1. Thaw mutton; Rinse in running water briefly; Drain; Marinate in seasoning (1) for 30 minutes.
2. Rinse and cut Peking scallion into sections; Rinse, seed and shred red chili pepper; Peel, rinse and slice garlic.
3. Heat a wok with 1T oil over a high heat; Stir-fry Peking scallion over a low heat till soft; Add some salt and stir-fry over a low heat till mixed; Remove; Heat the wok with 1T oil over a high heat; Stir-fry garlic over a low heat till fragrant; Stir-fry the mutton over a high heat till medium done; Return the Peking scallion to the wok; Add red chili pepper and seasoning (2); Stir-fry over a high heat till mixed. Ready to serve.
