1. Discard the skin of frogs; Rinse; Reserve the frog legs; Marinate the frog legs in seasoning (1) for 1 hour.
2. Seed, rinse and cut a green bell pepper into pieces.
3. Seed, rinse and cut a red bell pepper into pieces.
4. Seed, rinse and cut red chili peppers into pieces.
5. Peel, rinse and slice garlics.
6. Peel, rinse and slice gingers.
7. Add 3 cups of oil to a wok; Bring to the boil over a high heat; Jiggle all the peppers in the oil briefly; Remove and drain.
8. Bring the oil to the boil over a high heat again; Jiggle the frog legs in the oil briefly; Remove and drain.
9. Set the oil aside, leaving 3T oil in the wok; Heat the wok over a high heat; Stir-fry the ginger and garlic over a low heat till fragrant; Return the frog legs to the wok and add seasoning (2); Stir-fry over a high heat till done; Return all the peppers to the wok; Stir-fry over a high heat till the sauce has almost dried out. Ready to serve.
