1 salmon head, 5 shiitake mushrooms, 1/2 carrot, 1/2 burdock, some spring onions, 2T oil.
SEASONINGS:
3T mayonnaise, 1T cooking wine, 1/2t salt, 1/2T sugar, some ground white pepper, 1 cup of water.
PREPARATION :
1. Cut salmon head into halves; Rinse and drain.
2. Peel, rinse and cut carrot into pieces; Rinse and soak shiitake mushrooms till soft; Peel, rinse and cut burdock into sections; Rinse and cut spring onion into sections.
3. Heat a non-stick wok with 2T oil over a high heat; Pan-fry the salmon head over a low heat till both sides have been slightly brown; Remove; Arrange the carrot, mushrooms and burdock on the wok; Return the salmon head to the wok; Add seasonings; Bring to the boil over a high heat; Cook over a low heat till the sauce has been a bit dry; Garnish with spring onion. Ready to serve.
