150g(0.3lb.) water, 220g boiling water, 1/2T fast fat dry yeast, 480g(1lb.) self-raising flour, 1T sugar, 1/2t chicken bouillon powder, 500g(1.1lb.) minced pork (foreleg preferred), 200g(0.4lb.) cabbage, some carrot, some spring onion, some ginger, steamer paper, clear film.
SEASONINGS:
(1) 3T soy sauce, 2T sesame oil, 1t sugar, 1t ground white pepper.
(2) 1t vinegar (red vinegar and black vinegar preferred), 3t soy sauce, 1/3t sugar, 2T boiled water, some ginger.
PREPARATION :
1. Add 150g water, 1/2T fast fat dry yeast, 240g self-raising flour, 1T sugar, 1/2t chicken bouillon power to a bowl sequentially and mix well; Cover with clear film; Ferment for an hour.
2. Rinse cabbage and chop finely; Rinse spring onion and chop finely; Rinse, peel and chop ginger finely; Rinse carrot and dice finely.
3. Stir minced pork, minced cabbage, minced spring onion, minced ginger and seasoning (1) well in one direction to be filling; Slap the filling hard to the table few times to make the filling be fluffy but not too loose.
4. Pour 220g boiling water into 240g self-raising flour; Stir well and leave it till it turns to be tepid; Mix well with the dough from procedure 1; Cover with clear film; Leave it for few minutes to make the dough loose.
5. Twist the dough into strips (about 2 cm in diameter); Cut into about 60 pieces.
6. Crush each piece of small dough, roll the edge to thin and round, and wrap with a spoon of the filling; Garnish each with diced carrot.
7. Arrange in steamers with steamer paper; Ferment for 5 to 10 minutes.
8. Steam over a medium heat; After bringing to the boil, continue steaming for 8 minutes. Serve with seasoning (2) and ginger.
COOKING TIPS:
1. After mixing well with the dough from procedure 1 in procedure 4, don't leave it for more than few minutes; otherwise it would be difficult to cut evenly.
2. It is better to keep the filling in refrigerator.
3. After every cut, twist the dough once and cut next from another angle so that it would be easy to roll the small dough round later.
4. The recipe here is for large quantities. Decrease or increase in proportion as needed. Treasure our food!
