1. Rinse and mince celery; Rinse and mince spring onion; Rinse and discard the stems of coriander.
2. Rinse ground pork; Add seasonings; Mix well by stirring clockwise; Leave for 1 hour; Add minced celery, minced spring onion and egg; Mix well by stirring clockwise; Slap the mixture hard to the table for at least 10 times to be the filling.
3. Wrap 1T filling with 1 wonton skin; Fold to half; Shape it into a fan-shape.
4. Add 3 cups of oil to a wok; Bring to the boil over a high heat; Deep-fry wontons over a medium heat till golden brown; Turn off the heat; Remove; Pat dry; Arrange on a serving plate with the lettuce on the side. Ready to serve.
