DEEP-FRIED SESAME BALL

INGREDIENTS :
1.5 cups of boiling water, 225g Chinese date paste, 1 cup of white sesame, 1 egg yolk, 6 cups of oil.

SEASONINGS:
300g glutinous rice flour, 37g wheat starch, 2T lard, 1T sugar.
 
PREPARATION :
1. Add seasonings to a stainless steel plate and mix well; Add 1.5 cups of boiling water; Mix well; Knead into smooth dough; Divide into 16 equal portions.
2. Wrap 1t Chinese date paste with each portion of dough; Shape each into a ball; Brush with egg yolk; Evenly coat with a layer of white sesame.
3. Add 6 cups of oil to a wok; Bring to the boil over a high heat; Turn to a low heat; Add the sesame balls and deep-fry over a low heat till golden brown; Turn to a high heat; Deep-fry over a high heat for 10 seconds; Remove and drain; Turn off the heat; Arrange on a serving plate. Ready to serve.
