INGREDIENTS :
200g red beans, 2 pieces of dried tangerine peels, some lotus seeds, 8 cups of water, 200g rock sugar.
 
PREPARATION :
1. Rinse red beans; Soak in water until soft (around 2 hours).
2. Rinse lotus seeds; Soak in water for 45 minutes.
3. Rinse dried tangerine peels; Soak in water until soft (around 45 minutes).
4. Pour 8 cups of water to a pot; Bring to the boil over a high heat; Add red beans, dried tangerine peels and lotus seeds; Cook over a low heat for 80 minutes; Remove.
5. Strain the sweet soup through a sieve to remove the seed coats and dried tangerine peels; Return the sweet soup and lotus seeds to the pot; Bring to the boil over a high heat again; Add rock sugar; Cook over a low heat until the sugar has dissolved. Ready to serve.

COOKING TIPS:
1. Quality red beans should be large in size, plump in form, and fragrant.
2. Quality dried tangerine peels should be from Xinhui County and at least 10-year-old.
