BEEF TENDERLOIN WITH TOMATO

INGREDIENTS :
150g(1/4 lb.) beef tenderloin, 1 tomato, 2 stalks of spring onions, 2T oil.

SEASONINGS:
(1) 1T rice wine, 1/4T soy sauce, 1t sugar, 1/2T cornstarch, 1t oil, some lemon juice.
(2) 1T soy sauce, 1/4t salt, 1t sugar, 1T cornstarch, 1/2T water.
 
PREPARATION :
1. Rinse ad cut tenderloin into thin slice; Marinate in seasoning (1) for 20 minutes.
2. Rinse and cut tomato Into small wedges; Peel, rinse and cut spring onions into sections.
3. Add seasoning (2) to a bowl and mix well.
4. Heat 2T oil in a wok over a high heat; Stir-fry spring onions till fragrant; Add tenderloin and stir-fry over a high heat till color changes; Add tomato and mixed seasoning (2); Stir-fry over a medium heat until the sacue has thickened. Ready to serve.
