BEEF TENDERLOIN WITH CELERY

INGREDIENTS :
225g(1/2lb.) beef tenderloin, 180g(5/12lb.) celery, 3 red peppers, 1 cup of oil.

SEASONINGS:
(1) 1T rice wine, 1/4T soy sauce, 1/2T sugar, 1/2T cornstarch, 1/2t sesame oil, some lemon juice.
(2) 1T rice wine, 1T soy sauce, 1/2t salt, 1/2t chicken bouillon powder.
 
PREPARATION :
1. Rinse and slice tenderloin; Marinate in seasoning (1) for 20 minutes.
2. Rinse, seed and slice red pepper; Rinse, remove leaves of, and cut celery into sections.
3. Heat a wok with 1 cup of oil over a high heat; Turn to a medium heat; Jiggle sliced tenderloin in the oil briefly; Remove and drain.
4. Set the oil aside, leaving 2t oil; Heat a wok over a high heat; Add celery and red pepper; Stir-fry over a high heat briefly; Return the tenderloin to the wok and drizzle with seasoning (2); Stir-fry over a high heat until well-mixed. Ready to serve.
