Preparation/方法
  1. Rinse dried shiitake mushrooms under running water; Soak in water for 15 minutes; Remove them; Rinse them under running water again; Soak them in 2 cups of water for 3 hours.
  2. Rinse dried snow fungus under running water; Soak it in water for 3 hours; Remove and drain it; Cut into small pieces with a pair of kitchen scissors.
  3. Rinse dried black jujubes under running water; Soak them in water for 15 minutes; Remove and drain them.
  4. Rinse fresh lily bulbs under running water; Soak them in water for 15 minutes; Remove and drain them; Cut off any brown parts of them with the kitchen scissors.
  5. Rinse a papaya; Pat-dry it with kitchen paper; Trim a bit off each base; Cut it in halves with a vegetable knife; Scoop out the seeds; Peel it with the knife; Cut it into chunks.
  6. Rinse and drain uncooked cashew nuts.
  7. Fill a stockpot with 2L water; Add the uncooked cashew nuts; Bring to the boil over a high heat; Add all the remaining ingredients (including the 2 cups of dried shiitake soaking water); Bring to the boil over a high heat again; Turn to a low heat; Cover the pot with its lid; Cook over a low heat for 2 hours; Stir seasonings into the soup; Turn off the heat; Arrange the soup in serving bowls; Ready to serve.
